Why 16GB is the realistic target

The DXP2800 ships with 8GB of DDR5 already fitted, and UGREEN caps the platform at 16GB because there is only one SO-DIMM slot. That means this upgrade is a replacement, not an addition. Pull the existing 8GB stick and fit a single 16GB module, or if you already own two 8GB sticks from elsewhere, note that this board cannot take two DIMMs at all, so a second stick does nothing for you.

The Intel N100 is a capable quad-core chip for this class of NAS, handling hardware transcode for Plex and Jellyfin comfortably, but it was never designed to be paired with huge memory pools. 16GB is plenty for SMB and NFS file sharing, a couple of Docker containers, and Plex Media Server running in the background. If your workload genuinely needs more RAM than that, the DXP2800 is the wrong NAS for the job, not a case of buying bigger sticks.

Stick to DDR5 SO-DIMM at 4800MHz or 5600MHz. The N100 platform does not care whether you buy 4800MHz or 5600MHz modules since the memory controller will run at its own supported speed regardless, so do not pay extra purely chasing the higher rated speed.
